Easy Turkey Meatloaf

Now that my husband is back from his Europe trip, I have a reason to cook healthy meals for two once again! When I go grocery shopping for us, we usually buy our meat in bulk at Sam's Club. Jaime helps split it into freezer bags and we have meat for weeks. (That's my money saving tip for the day.)

When making dinner, I usually make enough so that we have leftovers for lunch the next day. I almost have that down to perfection! I'm also slowly getting the hang of this providing 3-meals-a-day-thing that happens once you get married. ha! Also, sorry I have ugly kitchen counter tops--lovely perk to having to find a rental fast!


Ingredients: 2 lbs Ground Turkey
                    1 Onion, finely chopped
                    1 1/4 cup of bread crumbs (I got the Garlic and Herb kind)
                    1 cup of Milk
                    1 egg
                    Salt and Pepper to taste

        Sauce: 1/3 cup of Ketchup
                    3 tbsp mustard
                    3 tbsp brown sugar

There's a lot of onion that went into my meatloaf. If you're a onion lover like Jaime, then you'll love this recipe even more! If you're not a huge fan, then I'd suggest using half an onion. Just slice the ends off  & slice down the center. Peel the onion. Chop into smaller pieces to put in the food processor. Finely chop, unless you want big pieces in the meatloaf.

Form the meat mixture into a loaf shape on a 9x13 dish. Then mix the ingredients for the sauce and spread evenly over the top. You can save a little to dip your meatloaf in too! Put it the oven for an hour at 350 degrees. (Sorry I didn't move the cupcake pan! We use it to bake bacon in the oven. It's our favorite way to eat it!)



I roasted brussels sprouts, tossed in olive oil with Mrs. Dash Original seasoning. We bought a dollar loaf from the bakery at Walmart and sliced a couple pieces.  I lightly buttered it with garlic salt and toasted in the oven. We loved it!

  1. YUM! This looks delicious and pretty simple to make! I LOVE onions, but Matthew not so much haha. I will have to save this recipe and make for us though one day after we are MARRIED!! Cute hashtag, too ;) and Sam's Club is THE best! We love going there!
